Fish has a rough reputation in my house. It can be hard to get it just right, and what type of fish you choose really makes a world of difference. We no longer speak about the Great Salmon Mistake of 2008. But there’s something so effortless about tuna. Even people who hate fish love tuna in my experience, and it’s easy to use in a variety of recipes. From tuna salad to tuna casserole, I thought I had run the gamut. That is until I saw this recipe for tuna patties by Simply Recipes. While I didn’t grow up eating this childhood classic, I wish I had after tasting this recipe. Delicious, filling, and healthy, not to mention affordable and fast, this is everything a parent needs to get hungry kids fed in a hurry.

Quick tip: If you are using tuna packed in water, add a teaspoon extra of olive oil to the mixture, as it helps hold the patties together.
