This Is Cozy Comfort Food At Its Finest. Have You Tried It?

I am a comfort food lover to my core. If it’s a dish best served on a cold winter day I will most likely be in love after the first bite. I think this inclination to hearty dishes stems from a having a grandmother who never met a casserole she didn’t like and considered carbs the most important food group.

She impressed everyone who tasted her cooking, and I’m very fortunate to have a stash of all her best recipes to turn to whenever I’m craving them. One I’ve perfected over the years was her famous chicken and dumplings—an affair best left for lazy Sunday afternoons where you don’t mind spending a few hours in the kitchen.

But sometimes I’d find myself lacking the energy (or the time) to pull out all the stops and make her recipe from start to finish, so I had to get a little creative if I still wanted to get my chicken and dumplings fix. That’s when I found this recipe—and my comfort food loving soul cried tears of joy. It almost seemed impossible a recipe this easy could taste so good!

Quick Tip: A sprinkling of chopped fresh parsley (about a tablespoon) into the dish once everything is done cooking gives the dish a more sophisticated flavor.
