My husband and father share a birthday, so every year to celebrate we have a great big joint birthday dinner with all their favorite foods complete with a towering birthday cake made by yours truly. They’re both pretty open to whatever crazy flavor concoctions pop into my head, so over the years I’ve been able to try my hand at some pretty awesome cakes.

I’ve done a triple layer German chocolate, an orange cream cake roll, and a couple dozen stuffed cupcakes. And they’ve gladly gobbled them all up. So when my husband requested a classic white cake with vanilla frosting, I knew that I had to make it for him. (And I think my dad was looking forward to sticking to a classic, too.)

So I set to work as I always do, testing recipes before the big day to be sure that the one I brought over to the party was the best of the best—after all, those guys deserve it! And you know what? I could not for the life of me find a from scratch white cake recipe that lived up to my high expectations. I was officially stumped.

Quick tip: You can bake this in two 9 or 10 in round pans—the baking time may be a few minutes less so watch the cakes carefully.
