Best Comfort Food – Ever!
Did you eat those horrible little frozen pot pies at your house when you were a kid? Same here! At the time, we thought they were kind of exotic and pretty tasty. Plus they were one of the few things we were allowed to cook without adult supervision. They were far, far better than those frozen TV dinners that always looked a little green around the edges to me, and often left me feeling green around the gills, so to speak!
But a truly good pot pie is a marvel to behold! The delicate, flaky crust holding a treasure trove of veggies and meat, surrounded by a savory sauce, all in perfect proportions. There were times as a child, when I was not feeling well, that I actually had feverish dreams of having this glorious comfort food brought to me, having my pillows fluffed and a cool hand laid upon my brow by my loving mother….
Pop! There went that daydream bubble! That type of thing was never going to happen in my house! When I got out on my own, as a young adult, the comforts of pot pies were long forgotten in favor of fast food. They were part of my long-ago past.

Quick Tip: Make your life easier and use rotisserie chicken and frozen veggies. Or you can use any leftover chicken or turkey you might have on hand from recent meals. If you want to plan ahead, make a little extra chicken the next time you cook some for another recipe and set some aside to make this pot pie on another day.
