I Could Pop These Into My Mouth All Day Long!
I try to keep the school lunches I make for my kids interesting. Sandwiches can get pretty boring after a while, right? I know that using tortillas is a healthy alternative too, so I usually use them when I have deli meat or some chopped vegetables I want to roll up together for their meal.
I also like to make the kids’ lunches themed, if there’s a special holiday going on. For this past Cinco de Mayo, I can up with these Mexican Pinwheels, and the kids loved them! They weren’t expecting to see these in their lunch bags, so they came home very excited and told me I have to make them again.
Now, I make my Mexican Pinwheels once a week. There’s actually quite a lot in each tortilla wrap: cream cheese, beans, tomato, avocado, and green onion. Each wrap has a full serving of vegetables and there’s loads of protein from the beans!
I actually also made these for a snack at a birthday party not too long ago as well. I think these are a little different from your average pinwheels, which have turkey or ham in them, so they always seem to get gobbled up right away!

Quick Tip: Leave about a half inch of space on the tortilla, so the ingredients don’t squish out.
