So Many Fall Flavors In One Bowl
While pasta salad is great year round, I tend to think of it as a summer dish. Cold pasta with a tasty dressing is a perfect way to cool off from the summer heat. Then fall comes around and I’m just not quite ready to part with my easy pasta salad meals. That’s when I discovered this recipe and a fall pasta salad is exactly what I needed!
Apples, cranberries, pecans and spinach all pile into this pasta salad making it the epitome of fall flavors. All of my favorite things! And between the celery, apples and nuts, there is an amazing crunch to this pasta salad that I never knew I was missing- it’s so good! The textures, the flavors…. just wow!
And then there is the homemade dressing which only takes about a minute to whip up and is worth every second. Sweetened apple cider vinegar and poppy seeds are the main ingredients and they really set this pasta salad above the rest. So next time your craving autumn tastes for lunch or dinner, this pasta salad is the way to go. Make it for yourself, your family or for a party- everyone will be impressed.

Quick tip: If you make this salad ahead of time, wait to add the apple slices until just before serving so they do not turn brown.
