SHHHH! There Are Secret Ingredients in This Recipe!

This salad is great any time of year, but it is especially refreshing in the dog days of summer, when it is too hot to cook and you want something quick and easy for lunch or dinner. This recipe fits that need perfectly.

It is also a recipe that has several – possible – secret ingredients, if you choose to take advantage of them. I can’t imagine why you wouldn’t, since you’ve already admitted you don’t want to spend any more time than you absolutely have to in a hot kitchen, toiling away.

With these little conveniences, the recipe will come together more quickly, be more healthy and yes, even taste better. The best part? Nobody will even know, unless you confess!

Not only all of that, but this dish is so versatile that it can perform quadruple roles:  appetizer, salad, sandwich and entrée. I am talking about the humble, oh-so-popular chicken salad! But a new and improved version that you and your family will absolutely adore.

It is perfect as an appetizer or party food, served on little boats of endive leaves – or plain old crackers, if you prefer. It is great for a bridal shower or ladies luncheon piled atop greens. It is equally at home on your favorite sandwich bread. Or you can eat it by itself, maybe with a chilled glass of white wine.

Quick Tip:  SECRET INGREDIENT #1 – Use rotisserie chicken! Take the skin off and dice up the breasts. If it was a skinny little chicken, you can also use the thigh meat. Although it is, technically, dark meat, it is light enough to use in this salad and will add extra flavor. You can also use leftover chicken breasts, just make sure they were not heavily spiced in their original use, as this would overpower the delicate flavors in this salad.
