So Many Layers of Cheesy Goodness Inside This Casserole
I absolutely love Mexican food and was so excited to find this recipe as now Mexican food can be part of breakfast too! We no longer have to wait for lunch or dinner- hurray! But how does delicious Mexican cuisine translate into breakfast? After tasting this dish, you will definitely be wishing you had this recipe sooner.
Breakfast sausage, peppers, Old El Paso seasoning and eggs are mixed together to make a super tasty, omelet style mix. Tortillas and salsa are layered in a casserole dish along with the egg mix and, of course, cheese, cheese and more cheese. The casserole is then baked and, voila, a mouth watering breakfast is served!
I was already a huge fan of the breakfast casserole but this recipe sealed the deal- they really are the way to go! Perfect for serving lots of people, easy to make and oh so delicious, you can’t go wrong! And now, you can get your Mexican fix early in the morning to start your day off right. Thank you enchilada casserole for making my breakfast time so much better!

Quick tip: If you don’t have Old El Paso seasoning, use a mix of chili powder, salt, pepper, garlic powder, paprika and red pepper flakes
