Sausage & Hash Browns & Eggs – Oh My!
They say that breakfast is the most important meal of the day. It gets your sluggish metabolism up and chugging, and if you eat a healthy breakfast, it supposedly sets the tone for your eating patterns for the rest of the day. Well, I don’t know about all of that, but on dreary days, it would be great motivation to get out of bed if Stephanie’s great breakfast casserole was going to be greeting me in my kitchen!
This casserole has everything you could possible want in a breakfast casserole. Meat, potatoes, eggs, cheese and the perfect seasonings. That’s right, all in one dish! How amazing and convenient is that? The thing I really, no REALLY, like about this recipe is that you can make it ahead and just pop it in your oven the next morning.
Can you tell I’m not a morning person? I consider myself lucky if I can stagger out of bed, make my way down the hall and put the coffee on. I am always off to a great day if I make it there safely, without tripping over something or stubbing a toe on the way. Then I have to sit at the kitchen table while the coffee machine does its thing, recovering from that trek.

Quick Tip: While this version of the recipe was made with hot sausage and cheddar cheese, get creative and try other type of sausage (even links, maybe?), bacon or even salmon. Then try your chosen meat with different cheeses. I think salmon and smoked Gouda cheese, maybe with some mushrooms even, would be a very tasty combination.
