When is a Pie Not a Pie?

Quick! If you had to make a dessert because guests were coming and would arrive in an hour, what would you make? All you need is a blender. As recipe creator Sheena says, “These simple ingredients are always in my pantry and fridge, so I know if I need a quick dessert, I can always rely on this recipe.” There you go, problem solved!

Take a look at the ingredients. Don’t you already have them all on hand? I thought so! The trouble is, you just didn’t know you could put them together so easily and have such a tasty dessert as a result. Well, now you know! Myself? I will now keep these on hand, because I never know when the desire for dessert will overtake me.

But this is not just any old pie. This is a magic pie, which makes it even better. Best of all? You don’t have to use your stove to prepare any of the ingredients, nor will you need a mixing bowl, hand or stand mixer, spoon, or spatula.

In fact, you won’t need any of the usual pie-making kitchen tools or equipment. Well, except a pie pan. That’s because you make this magic pie in a blender!

Quick Tip:  Make sure that your eggs are fresh. Save your older eggs for boiling or frying. Using older eggs will make this turn out runny and it will not set up properly.

    This is an original Finnish Pannukakku and has been made long before time began. My mother and grandmother and her mother made this more than a century ago, and I continue to do so… delish!

    You can add coconut at the end, after you pour the mix into the dish, to make coconut custard pie. Delicious!!
