Have A Slice (Or Two) Of This Guilt-Free Bread For Breakfast

Tuesdays and Thursdays are incredibly hectic for my family. My youngest daughter has just joined her elementary school soccer team and they practice two nights a week and my oldest daughter has piano on Tuesdays and dance class on Thursdays. Every night it feels like we’re just racing the clock and hoping we aren’t late for one of their many activities.

Pair that with both my husband and I working full time, and things can get more than a little crazy on those busy nights. And I hate to admit it, but more often than not on those evenings we forego eating supper at home in favor of running through the drive thru of a fast food restaurant. I know it’s not the best for us but sometimes there’s just not enough time to get a healthy meal in.

Lately, though, I’ve been making more of an effort to plan ahead so we don’t always need to eat out. This usually means busting out my crockpot and starting a meal before I leave for work, so that when we get home all we need to do is sit down and eat. And the latest recipe we’ve tried is definitely a winner!

Quick tip: You can also use boneless skinless chicken thighs with this recipe for a more economical option.
