This Beautifully Bright Truffle Is Lemon Meets Sugar in the Best Way

When I hear the word truffle, I immediately start to think of a seriously complicated recipe that will be way outside my skill level. It conjures up images of French chefs working with expensive chocolate and mushrooms. But did you know that you can make truffles out of many other things? In fact, I recently learned, thanks to this recipe by Premeditated Leftovers, that you can make truffles out of box cake mix! Add in a few other ingredients for a bright, lemony flavor, and you’ve got this amazing lemon truffle recipe that takes just five ingredients, five steps, and about 15 minutes.

I first tried this one out on the fly when I realized I’d forgotten to make anything for a church function at the last minute. Not the best time to be making new recipes, but I was late already so why not? As it was, they turned out perfectly, with almost every one being gone when I came back. Quick tip: Using lemon juice from a bottle works just as well as using fresh lemons in this recipe.
